Juniper combines premier ingredients and old world technique to create comforting, yet inventive classic cuisine that connects the northern regions of Italy with central Texas. 

Nicholas Yanes – Executive Chef/Partner

Juniper is the compilation of experiences and ideology for Chef Nicholas Yanes. Chef Yanes was most recently Chef and Creative Director For Uchi Restaurants. That experience paired with chef positions at Hotel 50, Nana, Dallas Fish Market, and Oceaniare Seafood Room paved the way for this exciting new venture. In preparation Yanes spent time in the Northern Italian regions of Piedmont, Lombardi and Emilia-Romagna. Using notes from his travels, Yanes will combine premiere ingredients and old world technique to create comforting, yet inventive classic cuisine that connects the northern regions of Italy as well as other adjoining areas with central Texas.

Michael Covey – Director of Operations/Partner

Michael Covey is the Managing Partner for Juniper. Michael is a graduate of Texas State University San Marcos, where he received a BA in Theater and Minor in Music.

It was during college that Michael spent most of his time working in restaurants either waiting tables or bartending. After graduation, Michael headed back to his home town of Cypress, Texas (a suburb of Houston) where he worked for a steel mill. But Austin and the Texas Hill Country had dug its hooks in and Michael quickly returned to Austin after just 11 months. From there, Michael worked in sales roles for start-ups to large corporations but it wasn’t until he spearheaded a group of investors on The Goodnight that he realized his continued passion for the hospitality industry. From there and along side a lifelong family friend, Chef Nicholas Yanes, Juniper was created.

In his free time, Michael enjoys time with his wife of 5 years, Sarah Covey, as well as expanding his ever growing collection of 80’s-90’s B rated movies – which his wife likes to make fun of him for!
